Kdenlive/Manual/Settings Menu/Manage Project Profiles

This is available from the Settings menu.

Once the dialog appears select a profile to modify from the drop down.

Or select a profile as a base for a new profile from from the drop down and click the button with a green plus on it.

Fill in the settings for your project profile and give it a name and hit the Save button.
